Heston Blumenthal: In search of Perfection brings his scientific approach to cooking to a new series on BBC2. He is only occasionally seen on TV but this has been increasing to his own series. This is sure to make fantasic viewing.

This is like a lecture on good food. 

For the best steak, he scorched a huge piece of forerib of beef with a blow torch and then placed in in the oven at 50 degrees for 24 hours. This supposedly breaks all the normally tight and tough fibres and enhances the flavour. This process doesn't cook it. After the 24 hours, it is then ready to actually cook. He sliced off a thick slab of it and then pan fried it quickly for a few minutes each side.

It looked excellent. Must try it one day.

His Fat Duck restaurant in Bray is world famous.

the only way to cook a juicy steak is to start with the freshest meat obtainable.you cant put life back into anything thats been dead ten days. 
your mummified meat program left me both horrified and appalled, though i blame the program makers for allowing you the air time. give ray mears a cow and a bush knife. i guarantee a tastier result, and you could film it in real time in forty minutes including making the fire.
